The office of meat...

Our hosts in Volpaia recommend that we visit Dario Cecchini's restaurant for dinner our first night in Chianti.  We didn't have internet yet we just took their advice and went looking for the restaurant in Panzano, about 15 km away. Here's what we found on the street Dario runs!

After 30 minutes of appetizers in the butcher shop (chianti Classico, salumi, crostini, burro di chianti (lard)), we sat down for the main course with 60 of our closest friends. It began with acqua (naturale o frizz ante), more chianti, bread and fresh vegetables (carrots, celery, red onion and fennel) with salt and olive oil.

Here comes the first of five meat (beef) courses: chianti crudo, carpaccio di culo,costata alla Fiorentina, Bistecca panzanese, Bistecca Fiorentina.
